Description

The ENOBIOTEC research group of the University of Valladolid located in the E.T.S. de Ingenierías Agrarias de Palencia, is made up of professors from the Microbiology Area (Josefina Vila Crespo) and from the Food Technology Area (Encarnación Fernández Fernández and José Manuel Rodríguez Nogales).

The scientific activity developed by the group is integrated into the field of oenological biotechnology. Until now he has worked in the following lines of research:

Selection and identification of yeasts and bacteria of oenological interest.
New alternatives to improve the management of malolactic fermentation (MLF)
Yeast-lactic bacteria co-inoculation
Immobilization of lactic acid bacteria
Use of ultrasound techniques to monitor MLF
Development of biotechnological strategies to increase or modify the aromatic profile of white wines.
Improvement of the technological process for making sparkling wines.
Effect of moderate irrigation on the quality of musts and wines.
Sensory analysis: quantitative descriptive analysis and consumer studies.
